Grandma's Baked Custard


My favorite recipe for warm comfort.

1 egg
2 tbsp sugar or honey
½ tsp vanilla extract
1/8 tsp salt
¾ cup milk or half & half
nutmeg if desired

Place a loaf pan with ¾ inch deep hot water in the oven and set to preheat to 325 °F.

Lightly beat egg in a medium bowl. Blend in sugar or honey, vanilla, and salt. Blend in milk and vanilla. Pour into to 6-ounce custard cups or ramekins. Sprinkle with nutmeg. Place cups in hot water bath in oven, making sure water bath comes up 3/4 of the way up the custard cups. Bake 40-45 minutes until a knife inserted just comes out clean. A watery residue indicates over baking.

I've had the best success, oddly, with whole milk over skim or half n half. Freshly grated nutmeg is the best thing in the world.
