Best Carrot Cake
This is my mom's recipe for Carrot Cake. It makes the most moist and delicious carrot cake you'd ever want to eat.
2 cups sugar
3 cups flour
1 tsp baking soda
2 tsp cinnamon
¾ tsp salt
1 tsp baking powder
½ cup vegetable oil
1 tsp vanilla
3 eggs
2 cups grated carrots
1 cup crushed pineapple (drain the juice, but don't try to drain it dry)
1 cup chopped nuts
Sift together the dry ingredients, add the remaining ingredients and mix well, don’t overbeat.
Grease and flour a 13x9 pan. Pour in mixture. Bake at 350°F for about 1 hour.
I don't like traditional cream cheese frostings so I invented this one. Take 2 8-ounce blocks of cream cheese softened to room temperature and beat it one small jar pineapple ice cream topping until well blended. Now you know my secret.
